They will need to install the largest under counter grease trap available and maintain it per our department cleaning requirements. 2. If the menu changes and they prepare any other foods other than what we discussed they will have to meet our thousand gallon grease trap requirements. CSU will come by to inspect the facility. 3. They will need to get us a letter from the property owner stating that this location will be allowed an exemption only because there will be no cooking, baking, boiling etc. If the property changes owners or type of food prepared onsite a thousand gallon grease trap will be required. We can meet with them to make sure. they understand everything that we will require to get the exemption. They will need to Install the largest under counter grease trap available and maintain it per our department cleaning requirements. 2. If the menu changes and they prepare any other foods other then what we discussed they will have to meet our thousand gallon grease trap requirements. CSU will come by to inspect the facility. 3. They will need to get us a letter from the property owner stating that this location will be allowed an exemption only because there will be no cooking, baking, boiling etc. If the property changes owners or type of food prepared onsite a thousand gallon grease trap will be required.
